Super Bowl Sunday Snacks

Just thought I would post the recipes for the yummy snacks that I am taking to our Super Bowl party tonight. I have already previously posted the recipe for the tasty Chocolate Chex Caramel Crunch. If you missed that post, go here.

The other tasty snack is Bacon-Wrapped Lil' Smokies

1. Cut your bacon in thirds, then wrap each lil' smokie in a piece of bacon and secure with a toothpick.
2. Place smokies on your pan (lined with aluminum foil = easier clean-up!!), then coat them with brown sugar.
3. Bake at 325 for 40 minutes or so (until sugar is bubbly). You may even want to turn the smokies after 20 minutes.
**You can then place your smokies in a slow-cooker on a low setting to keep them warm until served.**
Then ENJOY!!!

Chocolate Chex Caramel Crunch

So, one of the main reasons why I chose to stock up on the Chocolate Chex cereal that was on sale last week at Safeway is because of the following yummy recipe. It has become one of my favorite snacks for parties, camping, or anytime!!!

Ingredients:
8 cups Chocolate Chex® cereal

3/4 cup packed brown sugar
6 tablespoons butter or margarine
3 tablespoons light corn syrup
1/4 teaspoon baking soda
1/4 cup white vanilla baking chips

How-To:
1. Into large microwavable bowl, measure cereal; set aside. Line cookie sheet with waxed paper. (Instead of using waxed paper, you can spray the cookie sheet with cooking spray or line with nonstick foil.)

2. In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on High 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour over cereal, stirring until evenly coated. Microwave on High 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite-size pieces.

3. In small microwavable bowl, microwave vanilla baking chips uncovered on High about 1 minute 30 seconds or until chips can be stirred smooth (bowl will be hot). Drizzle over snack. Refrigerate until set. Store in tightly covered container.
